Balsamic Vinaigrette

In this recipe, the brown sugar helps balance the acidity of the vinegar while contributing a subtle molasses flavour to enhance the depth of the dressing. Drizzle over your favourite salad greens! Makes 1 cup of dressing.

Ingredients

Balsamic vinegar 1/4 cup (60 mL)
Brown sugar 2 tsp (10 mL)
Garlic, minced 1 tbsp (15 mL)
Salt 1/2 tsp (2 mL)
Black pepper 1/2 tsp (2 mL)
Olive oil 3/4 cup (175 mL)

Instructions

  1. Beat the vinegar in a bowl with the sugar, garlic, salt and pepper until sugar and salt dissolve. 
  2. Then beat in the oil by droplets, whisking constantly (or combine all ingredients in a screw-top jar and shake well). 
  3. Taste and adjust the seasonings.
