In baked goods, the sugar absorbs water from other ingredients, helping to keep products like these madeleines moist, tender, and fresh. Makes 2 dozen madeleines.
Ingredients
Yellow cornmeal | 1/2 cup (125 mL) |
White flour | 6 tbsp (75 mL) |
Granulated sugar | 1 tbsp (15 mL) |
Baking powder | 2 tsp (10 mL) |
Salt | 1/2 tsp (2 mL) |
Cayenne pepper | 1 pinch (1 mL) |
Butter or margarine | 2 tbsp (30 mL) |
2% Buttermilk | 1/2 cup (125 mL) |
Egg | 1 large egg |
Fresh chives, finely chopped | 2 tbsp (30 mL) |
Instructions
- Preheat oven to 400°F (200°C) and grease 2” (5 cm) madeleine molds or miniature muffin tins.
- Combine cornmeal, flour, sugar, baking powder, salt, and cayenne in a food processor, add butter, then buttermilk, and then the egg and mix well.
- Add chives by hand to the mixture.
- Using a pastry bag or spoon, fill molds 3/4 full and bake 6 minutes or until golden.
