Corn and Chives Madeleines

In baked goods, the sugar absorbs water from other ingredients, helping to keep products like these madeleines moist, tender, and fresh. Makes 2 dozen madeleines.

Ingredients

Yellow cornmeal 1/2 cup (125 mL)
White flour 6 tbsp (75 mL)
Granulated sugar 1 tbsp (15 mL)
Baking powder 2 tsp (10 mL)
Salt 1/2 tsp (2 mL)
Cayenne pepper 1 pinch (1 mL)
Butter or margarine 2 tbsp (30 mL)
2% Buttermilk 1/2 cup (125 mL)
Egg 1 large egg
Fresh chives, finely chopped 2 tbsp (30 mL)

Instructions

  1. Preheat oven to 400°F (200°C) and grease 2” (5 cm) madeleine molds or miniature muffin tins. 
  2. Combine cornmeal, flour, sugar, baking powder, salt, and cayenne in a food processor, add butter, then buttermilk, and then the egg and mix well. 
  3. Add chives by hand to the mixture. 
  4. Using a pastry bag or spoon, fill molds 3/4 full and bake 6 minutes or until golden.
