Homestyle Banana Bread

Creaming the sugar and butter together introduces air into the batter, which helps the bread to rise. Sugar also helps keep baked goods, like this banana bread, fresh for longer by retaining moisture and preventing them from drying out. Makes 1 loaf (16 slices).

Ingredients

Whole-wheat flour 1 cup (250 mL)
All-purpose flour 1 cup (250 mL)
Baking soda 1 tsp (5 mL)
Salt 1/4 tsp (1 mL)
Ground cinnamon 1 tsp (5 mL)
Unsalted butter, softened 1/2 cup (125 mL)
Brown sugar  3/4 cup (175 mL)
Eggs, lightly beaten 2 large eggs
Overripe bananas, mashed 3 large bananas
Walnuts, chopped 1/3 cup (80 mL)

Instructions

  1. Preheat oven to 350 ºF (175 ºC). Line a 9 x 5-inch loaf pan with parchment paper. 
  2. In a large bowl, combine flour, baking soda, salt and cinnamon. In a separate bowl, cream together butter and brown sugar. 
  3. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture just until moist (do not over-mix). 
  4. Pour batter into prepared loaf pan. Top with the chopped walnuts. 
  5. Bake for 60 minutes, until a toothpick inserted into center of the loaf comes out clean. 
  6. Let bread cool in pan for 10 minutes; turn out onto a wire rack.
